Prepare Ingredients

    Soften and Measure

    Remove butter from the refrigerator about 30–60 minutes before starting so it is softened but not greasy. Sift the powdered sugar and unsweetened cocoa powder to remove lumps and aerate.

    If using, brew or heat the coffee/espresso and let it cool slightly. Melt the semisweet chocolate gently (in a microwave in short bursts or over a double boiler) and let cool to warm, not hot.

Make Buttercream

    Beat Butter

    Place the softened butter in a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed for 1–2 minutes until creamy and slightly pale.

    Add Cocoa

    Add the sifted cocoa powder to the butter and beat on low to incorporate, then increase speed to medium and beat 30–45 seconds until evenly distributed and the mixture smells chocolatey.

    Add Powdered Sugar Gradually

    With the mixer on low speed, add the sifted powdered sugar in three additions to avoid a powder cloud. After each addition, mix until mostly incorporated, then increase speed to medium-high for 10–20 seconds to smooth. Scrape down the bowl as needed.

    Adjust Texture

    With the mixer on low, add the heavy cream 1 tablespoon at a time (about 3 tbs total), the cooled coffee/espresso (if using), vanilla extract, and a pinch of salt. Increase speed to medium-high and beat for 1–2 minutes until light, fluffy, and spreadable. If the buttercream is too stiff, add an additional 1 teaspoon of cream at a time; if too loose, add up to 1/4 cup more powdered sugar.

    Optional: Add Melted Chocolate

    If using the melted semisweet chocolate for a richer flavor, make sure it is only slightly warm. With the mixer on low, pour the chocolate in a thin stream and mix until fully incorporated. Then beat on medium for 30–45 seconds to re-whip the buttercream. If the chocolate causes the buttercream to loosen, chill the bowl for 10 minutes and re-whip, or add up to 1/4 cup powdered sugar to firm it.

    Taste and adjust: add a pinch more salt if overly sweet, or a touch more vanilla for aroma. Ensure final consistency is smooth, pipeable or spreadable depending on use.

Finish and Store

    Use immediately to frost cakes or cupcakes. For piping, transfer to a piping bag fitted with desired tip. For spreading, use an offset spatula.

    Storage: Refrigerate in an airtight container for up to 5 days. To reuse, bring to room temperature and re-whip for 1–2 minutes to restore fluffiness. For longer storage, freeze up to 3 months; thaw overnight in refrigerator, then bring to room temperature and re-whip.
