Caesar dressing

    Make the dressing

    In a medium bowl, mash the chopped anchovy fillets with the minced garlic and a pinch of salt until a rough paste forms. Whisk in the mayonnaise, Dijon mustard, lemon juice, and Worcestershire sauce until smooth. While whisking, drizzle in the olive oil to slightly emulsify the dressing. Season with freshly ground black pepper to taste (about 1 tsp). Taste and adjust lemon, salt or anchovy as desired. Chill in the refrigerator while you assemble the salad or for at least 15 minutes to let flavors meld.

    Assemble the salad

    Place the washed and chopped romaine lettuce in a large mixing bowl. Add about three-quarters of the grated Parmesan and the croutons. Spoon 1/2 to 3/4 cup of the prepared Caesar dressing over the lettuce (start with less; you can add more to taste) and toss gently but thoroughly until leaves are evenly coated. Transfer to serving plates or a large bowl. Sprinkle the remaining Parmesan over the top. Finish with freshly ground black pepper (about 1 tsp) and a light sprinkle of kosher salt if needed.

    Prepare and grill chicken

    If adding grilled chicken, pound the chicken breast to an even thickness (about 1/2"), then brush with 1 tbsp olive oil and season both sides with 1/2 tsp salt and 1/2 tsp black pepper. Preheat a grill or grill pan over medium-high heat. Grill the chicken 4-6 minutes per side, until an internal temperature of 165°F (74°C) is reached and the exterior has good grill marks. Let the chicken rest 5 minutes, then slice thinly against the grain. Arrange slices over the finished salad and serve immediately.
