Prepare the apples
Peel (optional), core and slice the 3 apples into 1/4-inch thick wedges. Place the slices in a large bowl and toss immediately with 1 tablespoon lemon juice to prevent browning.

In the bowl with the apples, add 2 tablespoons granulated sugar, 1 teaspoon ground cinnamon, and 1/4 teaspoon salt. Toss gently until evenly coated. Set aside while you make the brown butter sauce (this allows flavors to marry and sugar to draw out some juices).

Brown the butter
In a medium skillet or saucepan over medium heat, add 6 tablespoons unsalted butter. Melt the butter, then continue cooking, swirling the pan occasionally. After several minutes the butter will foam, then begin to brown and smell nutty. Watch carefully and when it shows golden-brown flecks and a toasted aroma (about 5–7 minutes total), remove from direct heat to avoid burning but keep pan warm.

Build the sauce
Return the pan to low heat. Immediately stir in 3 tablespoons packed light brown sugar until dissolved. Add 1 tablespoon maple syrup (if using) and 1/2 teaspoon vanilla extract, stirring to combine. Pour in 60 ml apple cider or juice slowly — it will steam and loosen any browned bits. Stir and simmer gently 1–2 minutes until glossy and slightly thickened.

Taste the sauce and adjust: add a pinch more salt if it tastes too sweet, or a touch more lemon from the apples if it needs brightness.

Cook apples in sauce
Return the apple slices to the skillet with the brown butter sauce (or pour the sauce over the apples in their bowl and transfer everything to a clean skillet). Cook over medium-low heat, stirring gently, until apples are tender but still hold shape, about 6–8 minutes depending on thickness and variety. Spoon the sauce over the apples while they cook so they become glazed.

Plate the glazed apples warm, spoon any remaining brown butter sauce over top. Finish with a light sprinkling of 1/4 teaspoon sea salt flakes (optional) and 1 tablespoon chopped fresh parsley or mint for color (optional). Serve immediately.
