Prepare the Black Beans
In a small saucepan, heat the black beans over medium heat. Add salt and pepper to taste. Stir occasionally and cook until heated through, about 5-7 minutes.

Cook the Eggs
In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Crack the eggs into the skillet and cook them sunny-side up or to your preferred doneness. Season with salt and pepper. Cook for about 3-4 minutes until the whites are set but the yolks are still runny.

Warm the Corn Tortillas
In another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the corn tortillas one at a time, warming each for about 30 seconds on each side until they are soft and pliable.

Serve
Serve the Motuleños immediately while warm. Enjoy with additional ranchero sauce on the side if desired.
