Huevos Rancheros Recipe
A bed of whole black beans topped with a fried corn tortilla, sunny-side-up eggs. Guatemalan salsa roja, feta, queso fresco, sour cream, pico & guacamole.

Fry the Tortillas
In a skillet, heat 2 tablespoons of cooking oil over medium-high heat. Once hot, add the corn tortillas one at a time, frying each for 1-2 minutes on each side until they are golden brown and crisp. Remove and place on paper towels to drain excess oil.

Cook the Eggs
In the same skillet, reduce the heat to medium and add 1 tablespoon of oil. Crack the eggs into the skillet, cooking them sunny-side-up for about 3-4 minutes, or until the whites are set but the yolks are still runny. Season with salt and black pepper.

Assemble the Dish
On each plate, create a bed of the warmed black beans. Place a crispy tortilla on top of the beans and gently add a fried egg on top of the tortilla.

Add Toppings
Spoon Guatemalan salsa roja generously over the egg. Sprinkle feta and queso fresco on top, followed by dollops of sour cream, pico de gallo, and guacamole.

Serve
Serve the huevos rancheros immediately while warm, garnished with additional salsa and toppings as desired.
