Cook Onion and Garlic
In a medium skillet over medium heat, add a tablespoon of vegetable oil. Once hot, add the finely chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 5 minutes.

Combine Filling Ingredients
In a large mixing bowl, combine the cooked shredded chicken, mashed potatoes, sautéed onion and garlic, cumin, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Fill and Roll Tortillas
Take a warm tortilla and place about 2 tablespoons of the filling mixture at one end. Roll the tortilla tightly around the filling, tucking in the sides as you go to secure the filling. Repeat with the remaining tortillas and filling.

Fry Flautas
In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is hot (about 350°F or 175°C), carefully add the rolled flautas, seam side down. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
