Prepare the Refried Black Beans
In a small saucepan, heat the refried black beans over medium heat. Stir occasionally until heated through, about 5 minutes. If the beans are too thick, you can add a little water to achieve your desired consistency.

Cook the Plantains
Peel the ripe plantains and slice them diagonally into 1-inch thick pieces. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the plantain slices and cook for about 3-4 minutes on each side, until they turn golden brown. Remove from the skillet and place on a paper towel to drain excess oil. Lightly sprinkle with salt.

Scramble the Eggs
In a bowl, crack the eggs and whisk them with salt and black pepper. In the same skillet you used for the plantains, add the remaining tablespoon of olive oil and heat over medium-low heat. Pour in the whisked eggs and gently stir with a spatula, cooking until the eggs are softly scrambled, about 3-5 minutes.

Prepare the Feta
While the eggs are cooking, crumble the feta cheese into small pieces and set aside.

Warm the Tortillas
In a dry skillet, warm the flour tortillas over medium heat for about 30 seconds on each side, or until pliable.

Assemble the Breakfast
On each plate, serve a portion of scrambled eggs topped with crumbled feta, a side of refried black beans, golden fried plantains, a dollop of sour cream, and the warmed tortillas.
