    Prepare the black beans

    In a saucepan over medium heat, add the black beans and heat until warmed through. Season with salt and black pepper to taste. Set aside.

    Cook the carne asada

    Season the carne asada with salt and black pepper. In a skillet over medium-high heat, add 1 tablespoon of vegetable oil. Once hot, add the carne asada and cook for about 5-7 minutes on each side until well browned and cooked through. Remove from heat and let it rest before slicing.

    Fry the plantains

    Peel the plantain and cut it into thick slices. In the same skillet, add 1 tablespoon of vegetable oil over medium heat. Fry the plantain slices until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.

    Cook the eggs

    In a separate skillet, cook the eggs to your preference (sunny-side up, over-easy, or scrambled). Season with salt and pepper.

    Assemble the tostadas

    On each corn tostada, spread a layer of warmed black beans. Top each with a cooked egg, a generous pour of ranchero sauce, and sprinkle dry cheese and queso fresco on top.

    Add garnishes and serve

    Add a dollop of guacamole on each tostada, followed by a sprinkle of chopped parsley. Slice the carne asada and arrange on the side of the tostadas along with the fried plantains. Serve immediately.
