Method

Preparation of Pork

    Prepare the Marinade

    In a blender, combine the orange juice, lime juice, guajillo peppers (stems and seeds removed), garlic cloves, salt, black pepper, cumin, oregano, and bay leaves. Blend until smooth.

    Marinate the Pork

    Place the pork shoulder in a large bowl or resealable bag. Pour the marinade over the pork, making sure it is well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

    Prepare for Cooking

    If using banana leaves, soak them in hot water for 15 minutes to make them pliable. Preheat your oven to 300°F (150°C).

    Wrap the Pork

    If using banana leaves, lay them flat on a large sheet of aluminum foil. Place the marinated pork in the center of the banana leaves, then fold the leaves over the pork and wrap it tightly in the foil.

    Cook the Pork

    Place the wrapped pork in a roasting pan and cook in the preheated oven for 4 to 5 hours, or until the pork is tender and easily shredded with a fork.

Serving

    Shred the Pork

    Once cooked, carefully unwrap the pork and shred it using two forks, discarding any large pieces of fat.

    Serve

    Serve the shredded pork in warm corn tortillas, topped with pickled red onions and fresh cilantro.
