    Prepare the Steak

    Season the beef cube steaks with salt, black pepper, paprika, onion powder, and garlic powder on both sides.

    Set Up Dredging Station

    In one bowl, whisk together the eggs and milk. In another bowl, place the flour. Dip each seasoned steak into the flour, then into the egg mixture, and back into the flour to coat thoroughly.

    Fry the Steaks

    In a large skillet over medium-high heat, add enough oil to cover the bottom. Once hot, carefully add the coated steaks. Fry on each side for about 3-4 minutes or until golden brown. Remove and place on a paper towel-lined plate to drain excess oil.

    Make the Gravy

    In the same skillet, melt the butter over medium heat. Add the diced jalapenos and sauté for 2-3 minutes until softened. Sprinkle in the remaining flour (about 1/4 cup) and stir to create a roux.

    Slowly whisk in the chicken broth and bring to a simmer. Cook until the gravy thickens, about 3-5 minutes. Season with salt and pepper to taste.
