Cook the Bison Meat
In a skillet over medium heat, add the bison ground meat. Cook until browned, breaking it apart with a spatula, approximately 7-10 minutes. Drain any excess fat.

Cook the Macaroni
In a large pot, bring water to a boil and add the elbow macaroni. Cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, drain and set aside.

Combine Ingredients
In the skillet with the cooked bison meat, add the cooked macaroni and shredded cheddar cheese. Stir until the cheese melts and everything is well combined, about 2-3 minutes. Season with salt and pepper to taste.

Prepare the Waffles
Toast the waffles in a toaster or in an oven until crispy. This should take about 3-5 minutes.

Assemble the Cheeseburger Mac
On one waffle, spoon a generous amount of the bison and macaroni mixture. Top with shredded lettuce and place the second waffle on top. Press down gently to secure the layers.
