Sweeten the water

Combine cold water and granulated sugar in a small pitcher or measuring cup. Stir until the sugar is mostly dissolved (about 30 seconds). Add the lemon juice and salt and stir to combine. This creates a lightly sweetened base that balances the ice and fruit flavors.

Blend the slushy

Place 4 cups of ice into a high-powered blender. Pour the sweetened water mixture over the ice. Secure the lid and pulse 4–6 times to break the ice, then blend on high for 20–30 seconds until the texture is thick and granular but pourable. If your blender struggles, blend in two shorter bursts and tap the lid between bursts to redistribute ice.

Adjust consistency

If the slushy is too thick, add 1–2 tablespoons of cold water and pulse once or twice. If it's too thin, add 1/2 cup additional ice and pulse until the desired slushy texture is reached. Taste and adjust sweetness with up to 1 tablespoon more sugar or a splash more lemon if needed.

Prepare chosen flavor

If using berry puree: mash or blitz 1 cup berries with 1 tablespoon sugar, then strain if you want a smooth texture. If using orange juice: use freshly squeezed juice and taste for sweetness. If using soda: chill beforehand. If using flavored syrup: have it ready.

Combine or layer flavors

Option A — Mixed: Add 1 cup of your chosen flavor (berry puree, juice, soda, or syrup) to the blended base and pulse 3–4 times to combine evenly. Option B — Layered: Reserve half of the base slushy. Stir 1/2 cup flavor into the reserved half, pour into glasses as the bottom layer, then top with the plain base or a different flavored layer and swirl gently for a two-tone effect.

Taste and finish

Taste the flavored slushy and adjust sweetness or acidity — add up to 1 tablespoon more syrup or 1 teaspoon lemon juice if necessary. If carbonation is used (soda), fold it in gently with a spoon rather than blending to retain fizz.

Garnish & Serve

Divide the slushy into 2 large glasses (serves 2). Garnish each with a sprig of fresh mint and a lemon or lime wheel on the rim. Insert a straw and serve immediately so the slushy keeps a granular frozen texture.

Leftovers and notes: Slushies are best fresh. If you need to hold for 15–30 minutes, keep chilled in the freezer and re-pulse in the blender for 5–10 seconds before serving to restore texture. For an alcoholic version, add 45 ml (1.5 fl oz) rum or vodka per serving and stir gently after blending.
