Prepare aromatics
Crush the ginger with the side of a knife and slice into 1/8-inch pieces. Bruise the lemongrass by hitting it with the flat of a knife and cut into 3–4 pieces. Peel and halve the shallots. Smash the garlic cloves lightly.
Simmer broth
In a medium-large pot, combine the chicken broth and water. Add the prepared ginger, bruised lemongrass, bay leaf, and half of the sliced shallots. Bring to a gentle simmer over medium heat, then reduce to low and simmer uncovered for 12–15 minutes to infuse flavors.
Season the broth
After simmering, remove and discard the lemongrass pieces and bay leaf. Stir in fish sauce, white pepper, and salt. Taste and adjust seasoning — it should be savory with a mild aromatic ginger note.

Prepare crab claws
If crab claws are frozen, thaw in the refrigerator or under cold running water. Rinse and pat dry. Using kitchen shears or a crab cracker, lightly crack the shell of each claw so the flavor penetrates the meat and it’s easier to eat once cooked.
Add the crab claws to the simmering broth and increase heat to maintain a gentle simmer. Cook for 6–8 minutes (longer for very large claws) until the shells turn bright orange and the meat is opaque. If using white fish, add the pieces for the last 3–4 minutes so they just cook through.
Using a slotted spoon, transfer the cooked crab claws (and fish, if used) to a bowl and cover to keep warm. Leave the broth simmering for the next steps.

If you prefer a slightly thicker soup body, stir the cornstarch into the cold water to make a slurry. While the broth is at a bare simmer, slowly whisk the slurry into the broth and simmer 1 minute until the soup slightly thickens. Do not overcook; the soup should remain light.
Finishing & Garnish
Stir in fresh lime juice and sesame oil. Taste and adjust seasoning with additional fish sauce, salt, or lime as desired. If you like heat, stir in chili flakes or a small drizzle of Sriracha to taste.
Ladle the soup into bowls, placing crab claws and any fish pieces in each bowl. Garnish with chopped scallions and cilantro leaves. Serve immediately with lime wedges on the side for extra acidity.
