Cafe Christo

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk them together until well combined.

Mix Dry Ingredients

In a separate bowl, whisk together the milk, eggs, and melted butter until smooth.

Combine Wet Ingredients

Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix. The batter should be slightly lumpy.

Combine Mixtures

Heat a non-stick skillet or griddle over medium heat. Optionally, you can lightly grease it with butter or cooking spray.

Preheat the Pan

Pour about 1/4 cup of the batter onto the skillet for each Café Christo. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.

Cook the Batter

While the Café Christos are cooking, prepare the toppings by slicing the strawberries and banana.

Prepare the Toppings

Stack two or three Café Christos on a plate. Top with sliced strawberries, bananas, and a generous dollop of whipped cream. Drizzle with maple syrup.
