Preparation
Prepare the Coffee
Brew 240 ml of espresso coffee and let it cool to room temperature.
Whisk Egg Yolks and Sugar
In a mixing bowl, whisk together 3 egg yolks and 100 g of granulated sugar until the mixture is pale and fluffy.
Whip the Cream
In another bowl, whip 200 ml of heavy cream until stiff peaks form.
Combine Mixtures
Carefully fold the whipped cream into the mascarpone mixture until fully incorporated. Add 1 tsp of vanilla extract.
Assembling the Tiramisu
Soak the Ladyfingers
Quickly dip each ladyfinger into the cooled espresso coffee, ensuring they absorb some liquid but do not become soggy.
Layer the Ingredients
In a rectangular dish, place a layer of soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers.
Repeat Layers
Add another layer of soaked ladyfingers on top of the mascarpone mixture followed by the remaining mascarpone mixture.
Chill
Cover the dish with plastic wrap and refrigerate for at least 4 hours, ideally overnight, to let the flavors meld.
Serve
Before serving, dust the top with 2 tbs of cocoa powder for garnish.
