Pimento Cheese Preparation

Prepare the Cheese Mixture

In a large mixing bowl, combine the cream cheese and sharp cheddar cheese. Use a hand mixer or a fork to blend until smooth.

Add Pimentos and Seasonings

Fold in the pimentos, mayonnaise, garlic powder, onion powder, and season with cayenne pepper, salt, and black pepper. Mix until all ingredients are well incorporated.

Chill the Mixture

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.

Mix Dry Ingredients

In a bowl, whisk together the all-purpose flour, cornmeal, baking powder, and salt until well combined.

Combine Wet Ingredients

In a separate bowl, mix the olive oil and water together.

Form the Dough

Add the wet ingredients to the dry ingredients and stir until a dough forms. If the dough is too sticky, add a little more flour.

Roll Out the Dough

Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the dough to about 1/8 inch thick.

Cut and Bake Crackers

Cut into desired shapes and place on a baking sheet. Bake for 12-15 minutes or until lightly golden and crisp.

Cool and Serve

Remove from oven and allow to cool. Serve the pimento cheese alongside the house-made crackers.
