Method
Preparing the Marinara Sauce
Sauté Garlic
Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, sugar, salt, black pepper, and red pepper flakes.
Simmer the Sauce
Bring the mixture to a simmer. Reduce heat to low and let it simmer for about 20-30 minutes, stirring occasionally.
Preparing the Fried Calamari
Prepare the Calamari
Clean and slice the calamari into rings if not already prepped.
Mix Dry Ingredients
In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika.
Prepare Wet Ingredients
In another bowl, whisk together the eggs and buttermilk until well combined.
Dredge the Calamari
Dip the calamari rings first into the wet mixture, shaking off excess, then coat them in the flour mixture.
Heat the Oil for Frying
In a large pot or deep fryer, heat vegetable oil to 375°F (190°C).
Fry the Calamari
Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Avoid overcrowding the pot.
Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Serve immediately with the marinara sauce.
