Preparation
Cook the Pasta
In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Chicken
While the pasta is cooking, season the chicken breasts with olive oil, salt, and black pepper. Preheat a grill or skillet over medium-high heat, then grill the chicken for 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes and then slice it into strips.
Make the Alfredo Sauce
Combine Cream and Cheese
Slowly pour in the heavy cream, stirring continuously. Bring the mixture to a gentle simmer and then add the grated Parmesan cheese, nutmeg, salt, and black pepper. Stir until the cheese is melted and the sauce is smooth.
Combine and Serve
Mix Pasta and Sauce
Add the cooked fettuccine pasta to the Alfredo sauce. Toss to coat the pasta evenly with the sauce.
Serve with Chicken
Serve the pasta on plates, topped with sliced grilled chicken. Garnish with chopped parsley.
