Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. Place them in a large bowl.

Prepare the Breading
In a separate bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

Coat the Calamari
Dip each calamari ring into the wet mixture, allowing excess to drip off, then coat it in the flour mixture. Set aside on a plate.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the calamari in batches for 2-3 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.

Prepare the Sauce
In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté until fragrant (about 1 minute).

Add Tomatoes and Seasoning
Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

Finish the Sauce
Let it simmer for about 15-20 minutes, stirring occasionally. Add fresh basil leaves just before serving.
