Sage Sausage Patties

    Mix the sausage base

    In a large bowl combine the ground pork, chopped fresh sage, ricotta, shredded mozzarella, breadcrumbs, minced garlic, egg, kosher salt, and black pepper. Mix with your hands or a spoon until just combined — avoid overworking to keep patties tender.

    Portion and form

    Divide the mixture into 4 equal portions (about 4 ounces each for 1 lb total). Gently form each portion into a round patty about 3 inches in diameter and 3/4 inch thick. Press a small shallow indentation in the center of each patty to help it cook evenly.

    Pan-fry the patties

    Heat a large skillet over medium heat and add 2 tablespoons olive oil. When oil shimmers, add the patties spaced apart. Cook 4–5 minutes on the first side without moving until nicely browned. Flip and cook another 4–5 minutes, or until internal temperature reaches 160°F (71°C) and cheese is melted inside. If browning too quickly, reduce heat to medium-low and cover loosely for 1–2 minutes to finish cooking through.

    Rest

    Transfer cooked patties to a plate and loosely tent with foil. Let rest 3–5 minutes while you prepare the fried sage and finishing glaze.

Fried Sage & Finishing

    Prepare butter for frying

    In a small skillet over medium heat, melt the 2 tablespoons unsalted butter. Once melted and foamy, reduce heat to medium-low so it stays hot but does not burn.

    Fry sage leaves

    Add the whole sage leaves in a single layer to the hot butter. Fry for 15–30 seconds per side until crisp and bright green, using tongs to flip. Watch carefully — sage fries quickly and can burn. Remove to a paper towel-lined plate and lightly sprinkle with 1/4 teaspoon salt to season.

    Make hot honey glaze

    In a small bowl combine the hot honey with the red pepper flakes and lemon zest. Stir to blend. Taste and adjust heat by adding more honey or red pepper flakes as desired.

    Glaze patties

    Return the skillet (medium-low heat) used for patties or use a clean skillet. Spoon about 1 teaspoon of hot honey glaze over each patty, letting it melt into the exterior for 20–30 seconds. Flip each patty and spoon another 1 teaspoon on the other side if you like a glossy finish.

    Finish and season

    Place each patty on a serving plate or toasted bread/bun. Top with 2–3 fried sage leaves per patty. Drizzle an additional 1/2 teaspoon hot honey over each if you want more sweetness and heat. Sprinkle a pinch of freshly ground black pepper across the top.

To Serve

    Serve the sage sausage patties hot on toasted bread, buns, or biscuits with a smear of extra ricotta if desired. Garnish with microgreens or arugula for brightness. Leftovers keep refrigerated for up to 3 days; reheat gently in a skillet over low heat to preserve crisped sage.
