Measure all ingredients. Crack eggs into a small bowl and whisk lightly; you'll add them gradually and may not need the full amount depending on dough consistency.

In a medium saucepan combine milk, water, unsalted butter, granulated sugar, and 1/2 tsp sea salt. Bring to a rolling simmer over medium heat, stirring occasionally so the butter melts evenly.

When the liquid reaches a simmer and butter is melted, remove pan from heat and immediately add the flour all at once. Stir vigorously with a wooden spoon or spatula until mixture comes together into a smooth ball and pulls away from pan sides, about 1–2 minutes. Return pan to low heat and cook, stirring constantly, for 30–60 seconds to dry the paste slightly (this helps the dough hold its shape).

Transfer the paste to a bowl of a stand mixer fitted with the paddle (or a mixing bowl if using a hand mixer). Let cool 2–3 minutes so it’s warm but not piping hot (this prevents cooking the eggs).

With mixer on low, add eggs one at a time, fully incorporating each before adding the next. After 2 eggs, evaluate texture: the dough should be glossy, smooth, and drop slowly from the paddle in a thick ribbon. You may not need the entire 3rd egg; add just enough to reach that consistency. Stir in 1 tsp vanilla.

To test, drop a small spoonful into simmering water — it should hold shape. Transfer dough to a piping bag fitted with a large plain or star tip, or use two spoons for scooping.
Frying & Finishing

Heat oil in a heavy-bottomed pot or deep fryer to 350°F (175°C). Use a candy or instant-read thermometer to maintain correct temperature; adjust heat as needed. Have a paper-towel lined tray ready for draining.

Pipe or spoon 1–1.5 inch mounds of dough directly into the hot oil, spacing a few inches apart. Do not overcrowd the pot; fry in batches. If piped, pipe close to the oil surface or just above it so the dough detaches and drops in.

Fry until golden brown and puffed, about 3–4 minutes per side. Use a slotted spoon to turn them halfway to ensure even browning. Internal texture should be tender with a hollow-ish center.

While still warm, dust the zeppoles lightly with powdered sugar.
Honey-Pistachio Drizzle

Warm the honey gently in a small saucepan over low heat or in the microwave for 10–15 seconds so it becomes runny and easier to combine — do not boil.

Stir the finely chopped pistachios, 1 tsp lemon juice, and 1/8 tsp fine sea salt into the warm honey until evenly distributed. Taste and adjust salt or lemon for balance. Keep the drizzle warm but not hot; you want it pourable.

If desired, reserve 1–2 tablespoons of the chopped pistachios for garnish and to preserve some crunch on top.
Assembly & Serving

Place 3–4 warm zeppoles on a serving plate. Using a spoon, drizzle 1–2 tablespoons of the honey-pistachio mixture over each zeppole so it clings and pools slightly on top.
