Prepare the bread
Cut the ciabatta loaf in half lengthwise to create top and bottom pieces. If using a baguette, split it lengthwise. Lightly hollow out any very large air pockets so fillings sit evenly.

Slice the mozzarella and tomato
Slice the fresh mozzarella into 1/4-inch (6 mm) rounds. Slice the tomato into similar-thickness rounds. Pat tomato slices lightly with paper towel to remove excess moisture to avoid soggy bread.

Layer ingredients
On the bottom half of the bread, layer half of the basil leaves and half of the arugula (if using). Arrange the mozzarella slices in a single layer, then place the prosciutto slices folded or slightly overlapped on top of the cheese. Add the tomato slices over the prosciutto, then the remaining basil and arugula.

Make the dressing
In a small bowl, whisk together the extra-virgin olive oil (2 tbs), balsamic vinegar (1 tsp), Dijon mustard (1 tsp), mayonnaise (1 tbs, if using), salt (1/2 tsp) and black pepper (1/4 tsp) until emulsified.

Brush the cut exterior of the top half of the bread with butter or olive oil (1 tbs). Heat a skillet over medium heat (or preheat a panini press). Place the sandwich in the skillet and press gently with a spatula or close the panini press. Toast for 2–4 minutes per side (or 3–5 minutes in a press) until the bread is golden and the cheese is slightly warm but not fully melted, and the prosciutto is fragrant. If you prefer a cold sandwich, skip this step.

Slice and serve
Remove from heat, let rest 1 minute, then cut the sandwich into 2–4 portions depending on appetite. Serve immediately, with any reserved dressing on the side for dipping.
