Prepare choux base
In a medium saucepan set over medium heat, combine 1 cup water, 4 tablespoons unsalted butter, 2 teaspoons granulated sugar, and 1 teaspoon fine sea salt. Heat until butter melts and the mixture reaches a gentle boil.

Once boiling, remove pan from heat and immediately add 1 cup gluten-free all-purpose flour blend. Using a wooden spoon or heatproof spatula, stir vigorously until the mixture pulls away from the sides of the pan and forms a smooth ball (about 30–60 seconds). Return pan to low heat for 15–20 seconds, stirring constantly, to dry the dough slightly. Remove from heat.

Transfer the dough to a large mixing bowl (or the bowl of a stand mixer fitted with a paddle). Let it cool for 3–4 minutes so it is warm but not hot (warm dough prevents eggs from scrambling).

Add 3 large eggs one at a time, mixing well after each addition. If mixing by hand, beat vigorously until the egg is fully incorporated and the dough is smooth and glossy. After the third egg, stir in 1 teaspoon vanilla extract. The dough should be thick but pipeable — if too stiff, add a teaspoon of water at a time until the desired consistency is reached.

Heat 2 cups neutral oil in a heavy-bottomed saucepan or deep fryer to 360°F (182°C). If you don't have a thermometer, test by dropping a small bit of dough: it should sizzle and rise steadily without browning instantly.

Using two small spoons or a small cookie scoop (about 1 tablespoon capacity), drop rounded spoonfuls of dough into the hot oil, working in batches and leaving space for expansion. Fry for 3–4 minutes, turning occasionally, until golden brown and puffed.

Remove zeppoles with a slotted spoon to a paper towel–lined tray to drain. Keep warm in a low oven (200°F / 95°C) if making multiple batches.

Make pistachio paste
While zeppoles fry, place 3 ounces raw shelled pistachios in a food processor. Pulse until finely ground. Add 1 teaspoon softened unsalted butter and 1 teaspoon lemon zest, then process until a coarse paste forms. If needed, scrape down the sides and continue until a spreadable texture is reached (30–60 seconds). Do not overprocess into a smooth nut butter — a slightly textured paste is desirable.

Honey glaze
Warm 4 tablespoons honey gently in a small saucepan or microwave (10–15 seconds) until runny but not hot. Stir the honey into the pistachio paste (reserve about 1 tablespoon of honey for drizzling). The mixture should be thick but pourable; if too stiff, add 1/2 teaspoon more honey or a few drops of warm water.

If you prefer a dusted finish, mix 2 tablespoons powdered sugar with a pinch of lemon zest and set aside for dusting after glazing.

To fill: using a small piping bag fitted with a narrow round tip (or a small knife), make a small incision in the side of each warm zeppole and pipe or spoon approximately 1 teaspoon of the pistachio-honey paste into the center. Alternatively, you can split the zeppole like a cream puff and spread 1 teaspoon inside.
