Combine and Steep
In a clean, large jar or pitcher, add 1 cup coarsely ground coffee. Pour 4 cups cold filtered water over the grounds, ensuring all grounds are saturated. Stir gently for 10β15 seconds to make sure no dry pockets remain.

Rest
Cover the jar and refrigerate or leave at cool room temperature for 12β18 hours (12 hours for a lighter concentrate, up to 18 hours for a stronger concentrate).

Strain
After steeping, strain the concentrate through a fine mesh sieve lined with cheesecloth or a coffee sock into a clean container. If needed, strain twice to remove residual fines. You should have roughly 3 to 3.5 cups of cold brew concentrate.

Make or Measure Simple Syrup
If you do not have ready simple syrup: combine equal parts sugar and water in a small saucepan (heat gently until sugar dissolves), cool to room temperature. Use 3 tablespoons of syrup for this recipe.

Combine Flavorings
In a small bowl or measuring cup, mix 3 tablespoons simple syrup, 1 tablespoon fresh lemon juice, and 1 teaspoon vanilla extract. If using the optional orange peel, bruise it slightly to release oils and add to the mixture for bright aromatics. Stir to combine.

Prepare Glass
Fill a tall glass with 1 cup of ice.

Dilute Concentrate
Measure 3/4 cup cold brew concentrate into a separate mixing glass. Add 1 cup cold water or chilled sparkling water to the concentrate if you prefer a lighter, bubbly drink. (Adjust concentrate-to-water to taste: 1:1 for lighter, 1:0.5 for stronger).

Stir the prepared syrup, lemon juice, and vanilla into the diluted cold brew until combined. Taste and add up to 1 tablespoon more simple syrup or additional lemon juice as desired.

Leftover cold brew concentrate keeps refrigerated for up to 7 days; store syrup separately. Assemble individual servings when ready to preserve freshness.
