    Sweeten and flavor yogurt

    In a medium mixing bowl, combine the plain Greek yogurt, honey, and vanilla extract. Stir vigorously with a spoon or whisk until smooth and slightly glossy, about 30–45 seconds. Taste and adjust honey a little if you prefer sweeter parfaits.

    Prepare berries

    Wash all berries under cold water and drain thoroughly. Hull and quarter the strawberries so their size is similar to the other berries.

    Macerate fruit (optional)

    Place the strawberries, blueberries, and raspberries in a bowl. Sprinkle the lemon juice and optional granulated sugar over the berries and gently toss to combine. Let sit at room temperature for 10–15 minutes to release juices and develop flavor. If you prefer the parfait less juicy, skip the sugar and reduce rest time to 5 minutes.

    Toast oats and nuts

    Heat a small skillet over medium heat. Add the rolled oats and toast, stirring frequently, until they are fragrant and lightly golden, about 4–6 minutes. Add the sliced almonds or chopped nuts in the last 1–2 minutes to toast lightly. Remove from heat and let cool completely (about 10 minutes).

    Assemble parfaits

    Divide half of the toasted oats evenly among four serving glasses or bowls (about 2–3 tbs per serving). Spoon or pipe about 1/4 cup of the yogurt mixture over the oats. Add a generous spoonful (about 3 tbs) of the macerated berries and a little of their juices. Repeat with another layer of oats (about 2 tbs), another 1/4 cup of yogurt, and more berries. Finish with a sprinkle of remaining toasted oats, a pinch of bee pollen or chia seeds if using, and a mint leaf on each parfait.

    Serve or chill

    Serve immediately for a crisp texture. If you prefer the oats to soften and the flavors to meld, cover and chill the assembled parfaits for 20–30 minutes in the refrigerator before serving. Parfaits will keep refrigerated, covered, up to 24 hours (oats will soften over time).
