    If cooking bacon — skillet method (crispy)

    Arrange bacon slices in a single layer in a cold large skillet (cast iron preferred). Turn heat to medium. Cook slowly so fat renders: about 6–8 minutes on first side, then flip and cook 4–6 minutes more until desired crispness. Adjust heat down if edges brown too quickly. Transfer bacon to a paper-towel-lined plate to drain; blot excess fat. Sprinkle with a pinch of black pepper and, if desired, brush lightly with 1 tsp maple syrup while still hot for a glossy finish.

    If cooking bacon — oven method (even crispness)

    Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Lay bacon slices in single layer on rack. Bake 15–20 minutes, checking at 12 minutes for thickness; remove when at desired crispness. Transfer to paper-towel-lined plate and optionally brush with 1 tsp maple syrup and a light grind of black pepper.

    Prick each sausage link once or twice with a fork to prevent bursting. Heat 1 tsp neutral oil in a skillet over medium heat. Add sausage links in a single layer. Cook, turning frequently, for 12–15 minutes until browned all over and internal temperature reaches 160°F (71°C). In the last 2 minutes brush with 1 tbsp maple syrup if making maple-glazed sausages; continue turning to glaze evenly. Transfer to plate and rest 3 minutes before serving.

    Preheat oven to 400°F (200°C). Place sausage links on a baking sheet lined with parchment or foil. Bake 18–22 minutes, turning once halfway, until evenly browned and internal temperature is 160°F (71°C). For glaze, brush with maple syrup in the final 3 minutes and return to oven briefly to set.

    If excess fat accumulates in the skillet while cooking bacon or sausage, carefully pour off most of it into a heatproof container, leaving a thin coating to continue cooking. Use 1 tsp neutral oil at the start when cooking sausage in a cold pan to prevent sticking. For a richer finish, melt 1 tbsp butter into the skillet after proteins are cooked and briefly toss the cooked bacon or sausages to coat for extra flavor.
