1. Prepare cheeses

Crumble the feta and allow the cream cheese to come to room temperature for about 15 minutes. This helps the blender or food processor create a smooth texture.

2. Add the crumbled feta, softened cream cheese, and Greek yogurt to a food processor (or high-speed blender).

3. Add minced garlic, lemon juice, lemon zest, 3 tablespoons olive oil, and 1/2 teaspoon freshly ground black pepper to the bowl.

4. Pulse the mixture until it begins to combine, then run continuously and stream in cold water, one tablespoon at a time, until the dip reaches a smooth, airy whipped consistency. Total processing time should be 30–60 seconds depending on your equipment. Scrape sides as needed to ensure even blending.

5. Taste and adjust seasoning: add up to another 1/4 teaspoon black pepper if desired. If the dip is too tangy, add an additional tablespoon of honey from the finish section (optional) but reduce final honey drizzle accordingly.

6. Transfer the whipped feta to a shallow serving bowl and create a slight well in the center with the back of a spoon to hold the garnish and oil.

7. If using regular honey and you want a fermented-like tang, stir 1/4 teaspoon apple cider vinegar into 2 tablespoons honey and let sit 5 minutes. Otherwise use prepared fermented honey.

8. Drizzle the 1 tablespoon extra-virgin olive oil over the whipped feta, allowing some to pool in the well you created.

9. Generously spoon the 2 tablespoons fermented honey over the center of the dip, letting it mingle with the oil.

10. Finish with a generous pinch (about 1/2 teaspoon) of coarsely cracked black pepper over the honey and oil — this contrast is essential to the recipe.

11. Scatter fresh oregano or thyme leaves over the top if using, for a fresh herbal note.

12. Serve immediately with toasted pita, crostini, or vegetables. If you need to hold it for up to 2 hours, keep chilled and bring to cool-room temperature (10–15 minutes) before serving so the honey and oil loosen again.
