    Bring water to a boil

    In a large pot, bring 4 liters (about 16 cups) of water to a vigorous boil. Add 2 tablespoons kosher salt once the water is boiling.

    Cook linguine

    Add 12 oz dried linguine and stir to prevent sticking. Cook uncovered, stirring occasionally, until the pasta is al dente according to package instructions (usually 8–10 minutes). Reserve 1 cup of pasta cooking water, then drain the linguine and set aside.

Sauce Base

    Warm oil and butter

    While the pasta cooks, heat 3 tbsp olive oil and 2 tbsp butter in a large wide skillet over medium heat until butter melts and begins to foam.

    Sweat aromatics

    Add 4 thinly sliced garlic cloves and 1 minced shallot to the skillet. Sauté gently, stirring, until fragrant and just beginning to soften (about 1–2 minutes). Do not let the garlic brown.

    Add heat

    Stir in 1 tsp crushed red pepper flakes and cook for 20–30 seconds to bloom the spice.

Finishing & Flavor

    Deglaze

    Pour in 1 dl (about 3.4 fl oz) dry white wine (or stock) to deglaze the pan. Increase heat to medium-high and let the liquid reduce by about half, scraping up any browned bits, 1–2 minutes.

    Combine pasta and sauce

    Reduce heat to low. Add the drained linguine to the skillet along with 1–2 ladlefuls (about 1/2 cup) of the reserved pasta cooking water. Toss continuously to coat the pasta and allow the sauce to emulsify with the starches, about 1 minute.

    Finish the sauce

    Stir in 2 tbsp fresh lemon juice, 1 cup grated Parmesan, and 1 cup chopped parsley. If the sauce seems dry, add additional reserved pasta water 1–2 tbsp at a time until you reach a glossy, silky consistency. Season with 1 tsp salt and 1 tsp freshly ground black pepper; adjust to taste.

    Optional add-ins

    If using cherry tomatoes, stir in 1 cup halved tomatoes now and toss just to warm (30–45 seconds). If adding cooked shrimp or chicken, fold them in and warm through for 1–2 minutes.

Serve

    Transfer linguine to warmed bowls or a serving platter. Sprinkle extra grated Parmesan and chopped parsley on top. Serve immediately with lemon wedges on the side, if desired.
