    Prepare bread and cheese

    Lay out 4 slices of bread on a clean work surface. Evenly divide the cheese between two slices so each sandwich will have about 2 oz cheddar and 0.5–1 oz optional cheese (adjust to preference). Sprinkle a light pinch of salt and a small crack of black pepper over the cheese to enhance flavor.

    Butter or mayo the bread

    Spread approximately 1 tablespoon of softened butter evenly on the outside face of each slice of bread (the faces that will contact the pan). If using mayonnaise, spread the mayo on the outside in place of or in addition to butter for more even browning (about 1/2 tablespoon per slice if using). Make sure butter/mayo covers edge to edge for consistent crisping.

    Assemble

    Place the two buttered-outside slices together with the cheese inside (buttered sides facing out). Press gently to seal the sandwich.

    Heat pan

    Place a nonstick or cast-iron skillet over low to medium-low heat. Allow the pan to warm for about 1–2 minutes so the surface is evenly heated but not smoking. Low heat ensures cheese melts without burning the bread.

    Cook first side

    Place the sandwich in the cold pan (buttered side down). Cook for 3–4 minutes, checking after 2 minutes to ensure the bread is turning golden brown and not burning. If browning too quickly, reduce heat. Press gently with a spatula to create full contact with the pan.

    Flip and melt

    Flip the sandwich with a spatula and cook the second side for another 3–4 minutes. After flipping, cover the skillet with a lid for 1–2 minutes to trap heat and help the cheese fully melt. If you prefer a crispier crust, remove the lid for the final 30–60 seconds.

    Rest and slice

    Transfer the grilled cheese to a cutting board and let rest for 1 minute to allow the cheese to set slightly (this prevents it running out when cut). Slice the sandwich in half diagonally or down the middle.
