Infuse broth

In a medium saucepan, combine vegetable broth, sliced fresh ginger, garlic, and lemon zest. Bring to a gentle simmer over medium heat. Reduce heat to low and simmer gently for 10 minutes to allow the ginger and garlic to infuse the broth.

Finish base

Remove the pot from heat. Strain the broth through a fine-mesh sieve into a clean pot or bowl, pressing gently on solids to extract flavor. Return strained broth to the saucepan and whisk in miso paste until fully dissolved. Stir in soy sauce, kosher salt, and freshly ground black pepper. Keep warm over the lowest heat (do not boil miso).

Prepare vegetables

While the broth simmers, prepare the vegetables and herbs: small-dice the zucchini, seed and thinly slice the cucumber, trim and halve the sugar snap peas, and thinly slice scallions separating whites from greens. Chop mint, cilantro, and chiffonade basil. If using frozen peas, rinse under warm water to thaw quickly.

Briefly blanch (optional)

For crisper texture, bring a small pot of water to a boil, add zucchini and blanched peas for 20–30 seconds, then plunge into an ice bath to stop cooking. Drain well. Alternatively, leave vegetables raw for a very fresh summer bite.

Add vegetables to broth

Ladle warm (not boiling) miso-ginger broth over the prepared vegetables and herbs in individual bowls or into the pot and gently stir to combine. Add cucumber, zucchini, peas, snap peas, and the white parts of the scallions; reserve scallion greens for garnish. The residual heat will lightly cook the vegetables without wilting the herbs.

Stir in fresh lemon juice, rice vinegar, and toasted sesame oil into the soup. Taste and adjust seasoning with additional salt or soy sauce as needed. If you want heat, add red pepper flakes to taste.

Divide soup among bowls if not already portioned. Drizzle each bowl with a small amount of extra-virgin olive oil (optional) and sprinkle with toasted sesame seeds. Garnish with reserved scallion greens, chopped mint, cilantro, and basil chiffonade.

If using shrimp: gently poach peeled, deveined shrimp in the warm broth for 1–2 minutes until just cooked through, then remove and add to bowls before ladling broth over them. If using silken tofu: gently fold cubed silken tofu into each bowl just before serving so it warms without breaking up.
