Prepare the Pastry

Make the Dough
In a large bowl, mix the flour and salt. Gradually add the water and olive oil, mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Mix the Filling
In a mixing bowl, combine the sliced apples, pine nuts, crushed amaretti cookies, sugar, cinnamon, and lemon juice. Toss until well combined.

Add the Filling
Spread the apple filling evenly over the dough, leaving a border around the edges.

Roll and Bake
Carefully roll the dough into a log, tucking the edges in as you go. Place seam-side down on a baking sheet lined with parchment paper. Brush the top with remaining melted butter and bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until golden brown.

Allow the strudel to cool slightly. Dust with powdered sugar before slicing and serving.
