In a large brew kettle, heat 3 gallons of filtered water to about 160°F (71°C). Add the pale malt, caramel malt, and crystal malt to the water. Maintain the temperature at 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge the grains with an additional 2 gallons of hot water to extract sugars. Collect the wort in the kettle.

Sparging

Bring the wort to a boil. Once boiling, add the Citra hops and boil for 60 minutes. In the last 15 minutes of boiling, add Simcoe and Mosaic hops.

Boiling

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale yeast into the wort. Seal the vessel with an airlock and let it ferment in a dark, cool place for 1-2 weeks.

Fermentation

After fermentation is complete, transfer the beer to another sanitized container, add priming sugar if bottling, and bottle. Let the bottles condition for another 1-2 weeks.
