Method

Make the English Muffins

    Prepare the Dough

    In a large bowl, combine the flour, yeast, salt, and sugar. Add warm water and olive oil. Mix until a dough forms.

    Knead and Rise

    Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

    Shape Muffins

    After rising, punch down the dough and roll it out to about 1 inch thick. Cut into rounds and place on a baking sheet. Let rise for another 30 minutes.

    Cook the Muffins

    Heat a skillet over medium heat. Cook the muffins for about 7 minutes on each side until golden brown. Let cool.

Prepare the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place over simmering water and whisk continuously until thickened.
