Prepare Polenta

Cooking Polenta
In a pot, bring water and salt to a boil. Gradually whisk in the polenta, reducing heat to low. Cook for about 30 minutes, stirring frequently until thickened.

Setting Polenta
After cooking, pour the polenta into a greased baking dish and let it cool and set for at least 30 minutes. Once set, cut into squares or rounds.

In the same skillet, cook the chorizo over medium heat until browned and cooked through. Add shrimp and cook until they turn pink, about 3-5 minutes.

Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Poach for about 3-4 minutes until whites are set but yolks are still runny.
