Brewing Instructions

  1. 1

    Mash the Grains

In a large brew kettle, heat 8 cups of water to 160°F (71°C). Add the Pilsner malt and maintain the temperature for 60 minutes, stirring occasionally.

  2. 2

    Boil the Wort

After mashing, bring the mixture to a boil. Add the Saaz hops and boil for 60 minutes. With 15 minutes remaining, add the Hallertau hops.

  3. 3

    Cool the Wort

Once the boiling is complete, cool the wort rapidly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

  4. 4

    Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and corn sugar, then seal with an airlock. Let it ferment for about 1-2 weeks at around 65-70°F (18-21°C).

  5. 5

    Bottling

After fermentation, siphon the beer into sanitized bottles, leaving some space at the top. Cap the bottles and let them carbonate for another 1-2 weeks.

  6. 6

    Enjoy

Chill the bottles and enjoy your homemade Peroni Italian Pilsner!
