Make the Base
In a saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves and the mixture is warm, but not boiling.

Cook the Mixture
Continue cooking over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

Cool and Flavor
Remove from heat and stir in the vanilla extract. Allow the mixture to cool, then refrigerate until completely chilled. Once chilled, add your desired fruit puree, chocolate, or nuts for flavor.

Churn the Gelato
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-30 minutes.

Freeze and Serve
Transfer the gelato to a container and freeze for at least 2 hours before serving. Scoop and enjoy your gelato!
