    Make the Dough

    In a large bowl, mix the flour, salt, sugar, and instant yeast. In another bowl, combine the warm milk and water. Add the melted butter to the milk mixture. Gradually add the liquid to the dry ingredients, mixing until a dough forms.

    Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.

    While the dough is rising, prepare the butter for lamination. Place the 1/2 cup of unsalted butter between two sheets of parchment paper and pound it into a flat rectangle about 1/2 inch thick. Refrigerate until firm.

    Once the dough has risen, punch it down and roll it out into a large rectangle. Place the prepared butter in the center and fold the dough over it, sealing the edges. Roll it out again into a large rectangle and fold it into thirds. Repeat this process two more times, chilling the dough for 30 minutes between folds.

    Roll the dough out into a large rectangle one final time. Cut the dough into triangles. Place a piece of chocolate at the base of each triangle and roll them up from the base to the tip, creating a crescent shape. Place on a baking sheet lined with parchment paper.

    Cover the croissants with a damp cloth and let them rise for about 30-45 minutes until puffy.
