Pate Preparation

    Prepare the Base

    In a skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.

    Combine Ingredients

    In a large mixing bowl, combine the sautéed onion and garlic with the ground elk, ground bison, smoked duck, fresh thyme, heavy cream, eggs, salt, and black pepper. Mix well until all ingredients are fully combined.

    Blend the Mixture

    Transfer the mixture to a food processor and blend until smooth. You may need to scrape down the sides to ensure an even texture.

    Prepare for Baking

    Preheat the oven to 180°C (350°F). Line a loaf pan with parchment paper, leaving some overhang for easy removal.

    Bake the Pate

    Pour the pate mixture into the prepared loaf pan, smoothing the top. Place the loaf pan in a larger baking dish filled with hot water to create a water bath. Bake for 1 hour or until the pate is set and a knife inserted in the center comes out clean.

    Cool and Serve

    Once baked, remove the pate from the oven and let it cool to room temperature. Refrigerate for at least 4 hours before serving.
