    Prepare the Quail

    Preheat the oven to 375°F (190°C). Clean and season the quail with salt, black pepper, and fresh thyme. Set aside.

    Make the Stuffing

    In a skillet, heat olive oil over medium heat. Sauté minced garlic and shallots until translucent. Add the preserved chanterelle mushrooms and cook for an additional 2-3 minutes. Remove from heat and mix in the focaccia crumbs to create a stuffing.

    Stuff the Quail

    Stuff each quail with the prepared stuffing and secure with kitchen twine if necessary.

    Bake the Quail

    Place the stuffed quail in a baking dish and drizzle with brown butter. Bake in the preheated oven for 25-30 minutes or until the quail is cooked through and golden brown.

    Prepare the Collard Greens

    While the quail is baking, rinse and chop the collard greens. In a separate pot, sauté them in olive oil with a pinch of salt and black pepper until tender.

    Once the quail is done, let it rest for a few minutes before serving. Plate the quail alongside the sautéed collard greens and drizzle with any remaining brown butter from the baking dish.
