Prepare the chocolate
Melt the dark chocolate in a heatproof bowl set over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

Make the sabayon
In a separate bowl, whisk together the egg yolks and granulated sugar. Gradually add water and whisk until the mixture is thick and pale. Place the bowl over simmering water and continue whisking until it forms ribbons.

Combine chocolate and sabayon
Gently fold the melted chocolate into the sabayon mixture until well combined. Be careful not to deflate the sabayon.

Plate the dish
Spoon the chocolate sabayon into serving dishes. Top with fresh raspberries and sprinkle the charred spice mixture over the top. Garnish with mint leaves.
