Sourdough Crostini

Sourdough Crostini

    Prepare the Crostini

    Preheat the oven to 375°F (190°C). Slice the sourdough bread into 1/2-inch thick slices. Arrange on a baking sheet, drizzle with olive oil, and season with salt and black pepper.

    Bake the Crostini

    Bake in the preheated oven for about 10-15 minutes, or until golden and crispy. Let cool.

Onion Fig Jam

    Cook the Onions

    In a saucepan, heat olive oil over medium heat. Add the chopped onions and cook until softened, about 10 minutes.

    Make the Jam

    Add chopped figs, balsamic vinegar, brown sugar, thyme, and salt. Simmer for about 20-25 minutes until thickened. Let cool.

Pate de Campagne

    Mix Ingredients

    In a bowl, combine ground pork shoulder, ground pork liver, shallots, garlic, thyme, bay leaves, salt, pepper, and cognac. Mix well.

    Cook the Pate

    Transfer the mixture to a terrine or loaf pan. Bake in a water bath at 350°F (175°C) for about 1 hour, or until the internal temperature reaches 160°F (70°C). Let cool and refrigerate.

Blue Cheese Mousse

    Blend Mousse Ingredients

    In a mixing bowl, combine blue cheese, cream cheese, and lemon juice. Blend until smooth.

    Whip Cream

    In a separate bowl, whip heavy cream until soft peaks form. Fold into the cheese mixture gently until combined.
