Prepare the Apples
In a large bowl, combine the sliced apples, granulated sugar, brown sugar, ground cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated. Let the mixture sit for 15 minutes to allow the sugars to dissolve and the apples to soften.

Make the Pie Crust
In a mixing bowl, combine the all-purpose flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Slowly add ice water, one tablespoon at a time, mixing until the dough just comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Roll Out the Dough
On a floured surface, roll out one disc of dough to fit a large baking sheet (approximately 12x18 inches). Transfer the rolled dough to the baking sheet and trim any excess.

Fill the Pie
Spread the apple mixture evenly over the pie crust. Dot with additional butter if desired.

Top with Remaining Dough
Roll out the second disc of dough and place it over the apple filling. Cut slits in the top crust to allow steam to escape. Crimp the edges to seal.

Bake the Pie
Bake in the preheated oven for 45-50 minutes or until the crust is golden brown and the apples are tender. Check for doneness and cover with foil if the edges brown too quickly.

Remove the pie from the oven and let it cool for at least 30 minutes. Serve warm with a drizzle of salted caramel sauce, a scoop of buttermilk ice cream, and a sprinkle of toasted walnuts.
