Method
Salad Preparation
- 1
Prepare Kale
Wash the kale thoroughly under cold water. Remove the tough stems and tear the leaves into bite-sized pieces. Place in a large salad bowl.
- 2
Dice the Apple
Core the Honeycrisp apple and cut it into small cubes. Add to the bowl with the kale.
- 3
Add Goat Cheese
Crumble the goat cheese over the kale and apple mixture.
- 4
Add Roasted Grapes
If using pre-roasted grapes, add them to the salad. If not, roast grapes by placing them on a baking sheet, drizzling with olive oil, and roasting at 375°F (190°C) for about 15-20 minutes until soft and caramelized.
- 5
Toast the Walnuts
In a dry skillet over medium heat, toast the walnuts for about 5 minutes, stirring frequently until fragrant. Allow to cool, then add to the salad.
Dressing Preparation
- 6
Combine Dressing Ingredients
In a small bowl, whisk together the buttermilk, mayonnaise, fresh dill, fresh chives, garlic powder, salt, and black pepper until smooth and well combined.
- 7
Dress the Salad
Drizzle the herbed buttermilk dressing over the salad ingredients in the bowl. Toss gently to combine, ensuring everything is evenly coated.
