Oatmeal Cookie Crust

Bruléed Bananas

Method

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the old-fashioned oats, all-purpose flour, brown sugar, granulated sugar, melted butter, egg, baking soda, and salt.

    Stir the ingredients together until well combined. The mixture should be moist and crumbly.

    Press the mixture into the bottom and up the sides of a 9-inch pie pan evenly.

    Bake in the preheated oven for 10-12 minutes, or until lightly golden. Remove from the oven and let cool.

Bruléed Bananas

    Prepare the Bananas

    Slice the ripe bananas in half lengthwise and place them cut side up on a baking sheet.

    Brulee the Bananas

    Sprinkle 1 tablespoon of granulated sugar evenly over each banana half. Using a kitchen torch, carefully brulee the sugar until it caramelizes and forms a crispy layer. If you don't have a torch, you can place them under a broiler for a few minutes, but watch closely to avoid burning.

    Cool the Bananas

    Allow the bruléed bananas to cool slightly before using them in the pie.

Whipped Cream

    Whip the Cream

    In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until stiff peaks form.

    Add to Pie

    Spread the whipped cream over the cooled oatmeal cookie crust, leaving some for garnish if desired.

Assembly

    Assemble the Pie

    Arrange the bruléed bananas on top of the whipped cream layer in a decorative pattern.

    Refrigerate the pie for at least an hour to set before serving. Slice and enjoy your delicious banana cream pie!
