Preparing the Poached Eggs

Poaching the Eggs
In a medium saucepan, fill with water and add the vinegar and salt. Bring the water to a gentle simmer. Crack each egg into a small bowl and gently slide it into the water. Poach for 3-4 minutes until the whites are set and the yolk is runny. Remove with a slotted spoon and drain on paper towels.
Making the Pickle Brine Hollandaise

Prepare the Hollandaise
In a small saucepan, melt the butter over low heat. In a mixing bowl, whisk the egg yolks until they are pale. Gradually add the melted butter while whisking constantly. Stir in the pickle brine, lemon juice, and salt. Keep warm until ready to serve.

Fry the Potatoes
