Method

Preparing the Poached Eggs

  1. 1

    Poaching the Eggs

In a medium saucepan, fill with water and add the vinegar and salt. Bring the water to a gentle simmer. Crack each egg into a small bowl and gently slide it into the water. Poach for 3-4 minutes until the whites are set and the yolk is runny. Remove with a slotted spoon and drain on paper towels.

Making the Pickle Brine Hollandaise

  1. 2

    Prepare the Hollandaise

In a small saucepan, melt the butter over low heat. In a mixing bowl, whisk the egg yolks until they are pale. Gradually add the melted butter while whisking constantly. Stir in the pickle brine, lemon juice, and salt. Keep warm until ready to serve.

Cooking the Sauteed Greens

  1. 3

    Sauté the Greens

In a skillet, heat the olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant. Add the kale or spinach, season with salt, and sauté until wilted, about 3-4 minutes. Remove from heat.

Preparing the Choppy Chop

  1. 4

    Chop the Vegetables

In a bowl, combine the diced red onion, tomato, and chopped parsley. Mix well and set aside.

Cooking the Crispy Home Fries

  1. 5

    Fry the Potatoes

In a large skillet, heat the olive oil over medium-high heat. Add the cubed potatoes, paprika, salt, and pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden and crispy. Remove from heat.

Grilling the Shrimp

  1. 6

    Grill the Shrimp

In a bowl, toss the shrimp with olive oil, garlic powder, salt, and black pepper. Preheat a grill or grill pan over medium-high heat. Grill the shrimp for 2-3 minutes on each side until they are pink and opaque.

Assembling the Dish

  1. 7

    Plate the Dish

On each plate, layer the sautéed greens, followed by the grilled shrimp. Top with the poached egg and drizzle with pickle brine hollandaise. Add a side of crispy home fries and finish with the choppy chop mixture.
