Meatloaf Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Meatloaf Ingredients
In a large mixing bowl, combine the ground beef, ground pork, bread crumbs, eggs, milk, sautéed vegetables, salt, and black pepper. Mix until just combined, being careful not to overwork the meat.

Stuff the Meatloaf
Divide the meat mixture in half. Press half of the mixture into a loaf shape on a piece of parchment paper. Place the shredded fontina cheese in the center, then fold the other half of the meat mixture over the top. Shape into a loaf.

Bake the Meatloaf
Transfer the stuffed meatloaf to a baking dish. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).

Make the Gravy
Sprinkle the flour over the mushrooms and stir to combine. Cook for 1-2 minutes. Gradually whisk in the beef broth and soy sauce. Bring to a simmer and cook until thickened, about 5 minutes. Season with salt and black pepper.

Cook Vegetables
In a small saucepan, combine frozen peas and diced carrots. Add a small amount of water and bring to a simmer. Cook for about 5-7 minutes until heated through.

Drain any excess water. Add butter, salt, and black pepper. Stir to combine and serve warm.
