    Prepare the Cheese Curds

    In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Mix well.

    Make the Batter

    In another bowl, whisk together the eggs and milk until smooth. Gradually add the wet ingredients to the dry mixture, stirring until fully combined.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature as you fry.

    Coat the Cheese Curds

    Dip each cheese curd into the batter, allowing any excess to drip off. Carefully place the battered cheese curds into the hot oil.

    Fry the Cheese Curds

    Fry the cheese curds in batches for about 3-4 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Prepare the Charred Scallion Ranch

    While the cheese curds are frying, char the scallions over an open flame or on a grill until slightly blackened. Chop finely and mix with the ranch dressing in a bowl.
