Prepare the Cheese Curds
In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Mix well.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature as you fry.

Coat the Cheese Curds
Dip each cheese curd into the batter, allowing any excess to drip off. Carefully place the battered cheese curds into the hot oil.

Fry the Cheese Curds
Fry the cheese curds in batches for about 3-4 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve the crispy cheese curds hot with smoked guajillo chili salsa and charred scallion ranch on the side.
