Beef Tartare Preparation

    Prepare the Beef

    Finely dice the beef tenderloin into small cubes, ensuring that the meat is fresh and cold for safety. Set aside in a chilled bowl.

    Make the Smoked Garlic Aioli

    In a small bowl, combine the smoked garlic (minced), mayonnaise, lemon juice, Worcestershire sauce, and capers. Mix thoroughly until smooth. Season with salt and black pepper to taste.

    Combine the Ingredients

    In the bowl with the diced beef, add the chow chow and half of the smoked garlic aioli. Mix gently to combine the flavors without mashing the beef.

    Plate the Tartare

    On a serving plate, create a bed of arugula. Spoon the beef tartare mixture on top of the arugula.

    Garnish and Serve

    Grate the parmesan cheese on top of the tartare. Serve immediately with vinegar chips on the side and the remaining smoked garlic aioli for dipping.
