Oatmeal Cookie Crust

Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the old-fashioned oats, all-purpose flour, brown sugar, baking soda, and salt. Melt the butter and add it along with the vanilla extract to the dry ingredients. Mix until the dough comes together.

Bake the Crust
Press the dough into a pie dish evenly to form the crust. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown. Remove from the oven and let cool completely.
Bruléed Banana Filling

Prepare the Bananas
Peel the ripe bananas and slice them into thin rounds. In a skillet over medium heat, place the banana slices and sprinkle granulated sugar on top.

Brulée the Bananas
Cook the bananas for 2-3 minutes until the sugar caramelizes and the bananas are golden. Remove from heat and let cool slightly.

Make the Filling
In a mixing bowl, combine the heavy cream and vanilla extract. Whip until soft peaks form. Gently fold in the bruléed banana slices into the whipped cream.

Prepare the Whipped Cream
In a clean mixing bowl, add the heavy cream, powdered sugar, and vanilla extract. Whip until stiff peaks form.

Assemble the Pie
Spread the bruléed banana filling evenly over the cooled oatmeal cookie crust. Top with the whipped cream. Optionally, garnish with additional banana slices or a sprinkle of cinnamon.
