Method

Preparation of Base

  1. 1

    Combine Base Ingredients

In a large glass jar, combine 750 ml of neutral grain spirit with 250 ml of water. Stir well to combine.

Infusing Botanicals

  1. 2

    Add Botanicals

Add all the dried botanicals: dried orange peel, dried wormwood, dried chamomile flowers, dried gentian root, cinchona bark, dried cardamom pods, fresh mint leaves, star anise, and a cinnamon stick to the jar with the spirit mixture.

  2. 3

    Infuse

Seal the jar tightly and let the mixture infuse in a dark, cool place for 2 weeks. Shake the jar gently every few days to help the infusion process.

Straining and Sweetening

  1. 4

    Strain the Infusion

After 2 weeks, strain the mixture through a fine mesh strainer or cheesecloth into a clean container to remove the solid botanicals.

  2. 5

    Add Simple Syrup

Stir in 100 ml of simple syrup into the strained infusion to sweeten the amaro to your taste.

Bottling and Storing

  1. 6

    Bottle the Amaro

Pour the finished amaro into dark glass bottles for storage. Seal tightly and store in a cool, dark place.

  2. 7

    Serve

Let the amaro rest for another week before serving to enhance the flavors. Serve chilled or in cocktails.
